Classic Victoria Sponge Cake

A timeless recipe for your Cake and a Cuppa event

Welcome to our Classic Victoria Sponge Cake recipe, perfect for any Cake and a Cuppa gathering. This traditional British treat features light and airy sponge layers filled with sweet jam and dusted with icing sugar. It’s an ideal choice to accompany your afternoon tea or fundraising event.

Ingredients

  • Images of strawberry sponge cake and a chocolate sponge cake200g caster sugar
  • 200g softened butter
  • 4 eggs, beaten
  • 200g self-raising flour
  • 1 tsp baking powder
  • 2 tbsp milk
  • Strawberry or raspberry jam, for filling
  • Icing sugar, for dusting

Instructions

  1. Preheat the oven to 180°C (160°C fan). Grease and line two 20cm cake tins.
  2. Cream together the butter and sugar until pale and fluffy.
  3. Gradually add the beaten eggs, mixing well after each addition.
  4. Sift in the flour and baking powder, then fold into the mixture with a metal spoon.
  5. Add the milk and stir until smooth.
  6. Divide the mixture evenly between the cake tins and smooth the tops.
  7. Bake for 20-25 minutes until golden and springy to the touch.
  8. Cool in the tins for 5 minutes, then turn out onto a wire rack to cool completely.
  9. Once cool, spread one cake with jam and sandwich the cakes together. Dust with icing sugar before serving.

  1. Chocolate Sponge: Substitute 25g of self-raising flour with cocoa powder for a chocolatey twist.
  2. Lemon Sponge: Add lemon zest and a tablespoon of lemon juice to the batter for a zesty flavour.
  3. Fruit-filled Sponge: Fold fresh berries or diced fruits into the batter before baking for a fruity variation.
