Scones

Classic scone recipe

Perfect your afternoon tea with a timeless scone

A delightful addition to your Cake and a Cuppa event, our classic scone recipe promises traditional British charm. These scones are light, fluffy, and perfect with butter, clotted cream, and jam.

Ingredients

  • 350g self-raising flour
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 85g butter, cubed
  • 3 tbsp caster sugar
  • 175ml milk
  • 1 tsp vanilla extract
  • Clotted cream and jam, to serve

Instructions

  1. Preheat the oven to 220°C (200°C fan). Lightly grease a baking tray.
  2. Mix the flour, salt, and baking powder in a large bowl.
  3. Rub in the butter until the mixture resembles breadcrumbs.
  4. Stir in the sugar.
  5. Add the milk and vanilla extract, stirring until the mixture comes together.
  6. Turn the dough out onto a lightly floured surface and knead briefly until smooth.
  7. Roll out to 2cm thickness and cut into rounds using a 5cm cutter.
  8. Place on the prepared baking tray, brush the tops with a little extra milk.
  9. Bake for 12-15 minutes until risen and golden.
  10. Serve warm with clotted cream and jam.

Variations and alternatives

  • Fruit scones: Add dried fruit like raisins or currants to the dough before baking.
  • Cheese scones: Mix in grated cheese and a pinch of mustard powder or a spoonful of wholegrain mustard for a savoury twist.
  • Herb scones: Incorporate chopped fresh herbs like chives or rosemary into the dough.
  • Lemon scones: Infuse zest and a citrusy flavour into your scones with lemon zest and juice, perfect for a refreshing twist.
  • Ginger scones: Add warmth and spice to your scones by adding ginger, providing a unique and warm option. Serve with honey and cream.
