Follow our step-by-step instructions to create moist, tender cupcakes with a rich vanilla flavour. Top them with your favourite frosting and decorations for a personalised touch.

Ingredients

  • 175g softened butter
  • 175g caster sugar
  • 3 eggs
  • 175g self-raising flour
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • Various toppings: icing, sprinkles, chocolate chips, etc.

Instructions

  1. Preheat the oven to 180°C (160°C fan). Line a cupcake tin with paper cases.
  2. Cream together the butter and sugar until light and fluffy.
  3. Gradually add the beaten eggs, mixing well after each addition.
  4. Sift in the flour and baking powder, then fold into the mixture with a metal spoon.
  5. Stir in the vanilla extract.
  6. Divide the mixture evenly between the paper cases.
  7. Bake for 15-20 minutes until risen and golden.
  8. Allow to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
  9. Decorate as desired before serving.

  • 1-2 tbsp lemon juice (adjust to taste)

Instructions

  2. Gradually add the sifted icing sugar and beat until well combined.
  3. Mix in the lemon zest and lemon juice, adjusting the amount of juice for desired flavour.
  4. Use immediately to frost your lemon cupcakes, or store them in the refrigerator until ready to use.
